1 cup of water
2 tablespoons of molasses
1 tablespoon of yeast
4 cups of flour
1 teaspoon of salt
1 tablespoon of olive oil
Add the molasses to a bowl of warm water and stir it in. Then add the yeast and let it proof for 10 minutes. In a large mixing bowl combine the water with the flour one cup of flour at a time, first mixing with a large spoon or even a cat's tongue spatula. Add the salt to the third cup of flour (this prevents the yeast from getting killed by the salt.) It should be dry enough by the third cup to begin mixing by hand. Mix until all the flour is incorporated and then begin to knead it into a ball. Pour the olive oil on the ball then leave the ball in the mixing bowl covered with a kitchen towel for 2 hours. After the 2 hours the ball should've doubled in size, punch it down and then half it for 2 pizzas or quarter it for 4 strombolis/calzones. Each quarter should be about 770 grams.
Bake at 550°F for 10 minutes.
